  • Varieties: We combine the structure of Macabeo, the aromatic charge of Parellada, the acidity of Xarel.lo and the power of Chardonnay to enrich the organoleptic nuances of our quality sparkling wines.
  • Winemaking and aging: We make an extreme selection of grapes. Gentle pressing to extract the juice from the pomace. The first fermentation takes place in stainless steel vats at a controlled temperature of 15º-18ºC for 10 days. We have an underground wine cellar that maintains the ideal temperature and conditions for the second fermentation in the bottle, which takes place very slowly, at a temperature below 13º C, for about three months and remains in contact with the lees for more than 60 months, in order to achieve the optimal level of secondary aromas characteristic of long aging and to obtain a fine, integrated bubble.
  • Clarification: After aging, the bottle is turned upside down and rotated 1/8th of a turn to bring the lees to the neck of the bottle.
  • Disgorging: The next step is to remove the trub (dregs) so that the sparkling wine is completely clean. We dose the expedition liqueur that provides the sugar in the "brut" category, the 24k gold flakes and the blue color that give it a special shine.
  • Labelling: Gold metal label decorated with Swarovski® crystals.
  • Tasting Note: Good release of bubbles. Intense notes of ripe fruit (orange, apple, pineapple), yeast and pastry notes with a background of anise and honey. Intense entry, with personality and harmonious, well-integrated carbonation and light on the palate, with a long and persistent finish, characteristic of sparkling wines made with the traditional method, with long aging on their own lees.
  • Pairing: caviar, seafood, foei, strawberries, chocolate, are the most notorious, although they are an excellent accompaniment to any meal or any occasion enhancing important moments.
